VEGETABLE CUTLET

This is the only dish were all my family members agrees!!!still if its of non- veg then my husband will be more happy , then my son will be ok ok ....any way..with in sec i made this , the plate was clean..In this i have used spinach too... u can use any combinations of vegetables like carrots,betroots, green peas, beans,etc...but potatoes are the binding agents..tht is a must...more over cashew nuts are optional..but its biting in btw was amazing...here is the recipe...


Ingredients:

   
1. Potatoes   
2 Big
2. Cashewnuts  
1 tblsp
3.Beans   
4 no:s
4.Carrots   
1 no:
5.Spinach 
a hand ful
6.Bread crumbs  
1cup
7. Egg     
1 no:
8. Cumin Seeds 
1 tsp
9. Coriander pwd 
1 tsp
10. Turmeric pwd
1/4 tsp
11.Chilli pwd
1/2 tsp
12.salt
To Taste

  Method:

 1. Boil the potatoes and remove the skin and grate as shown in picture...and keep aside


2. In a blender, blend all the vegetables together ,except potatoes....

 


3. In a kadai, heat oil and add cumin seeds when it turns brown, add cashewnuts and saute it in low flame until its turns light 
brown..  
   
 
 
   4.Once the cashew nut gets brown , add chopped coriander leaves and saute, then add the blended vegetables to it and saute well....       
 
 
 
5.To this add turmeric pwd , coriander pwd, chilli pwd and salt.. and saute for a while, Now pour this mixture to grated potatoes and mesh it up with ur  hands.. 
         
 
 

6. Make any shape as u desire..i made simple oval shape...In a bowl take the egg white and in another plate take bread crumbs...
 
 

 7. First dip the cutlet in egg white and instantly dip it again in bread crumbs ..the crumbs must cover whole the cutlet..         
 
 
    
                                                                                                                       

  8. Heat oil in a pan.[use more oil than i have used..then the sides may also gets fried up...:) ...its just for a good look..but no diff in taste...]......put the cutlets into it and fry until both sides are golden brown.....

serve with tomatoe ketch up....
